Sour Cherry Cheese Pie Recipe

I haven’t made this sour cherry cheese pie in a long time, but now it’s time to put it on the table. And no, I wouldn’t have done it if my muse hadn’t bought such a pie from the supermarket. Although I told her to wait until the next day, she was impatient, but I didn’t want to give up either and show her that the one I made is much better, with a generous filling of cheese and not a a composition that honestly, DID NOT taste like cheese at all.

DOUGH PREPARATION

1. Sift the flour into a bowl and make a hole in the middle of it. Add water, salt, vinegar, then start kneading it until it becomes soft and elastic, without sticking to your hand very hard. Let the dough rest for half an hour, covered with a cling film.

2. Divide the dough into 4 equal parts, shape them into balls and put them in a pan with all the oil. Grease all 4 balls well and let them rest for another half hour.

METHOD OF PREPARATION FOR CREAM CHEESE

3. Put the cheese together with the sugar, the lemon peel and the 1/4 cups (50 grams) of semolina in a bowl. Mix well and set aside.

ASSEMBLY

1. Preheat the oven to 390°F (200°C). Line 2 large oven trays with baking paper.

2. On a well-oiled work surface, take out one ball at a time, which we gently stretch by pressing from the center outwards, then pull the edges so as to obtain a large rectangle.

At the bottom base of the dough, spread 1/4 of the total cream cheese and 1/4 of the drained cherries plus a spoonful of semolina over the cherries. Grease the entire surface of the dough with oil. We roll by bringing the bottom edge over the dough then by rolling. Do not roll tightly, leave looser.
We fold the resulting roll in half and place it on a large oven tray lined with baking paper, grease it with oil. We do the same with the other 3 pieces of dough and bake 2 pies in a tray for 22-25 minutes or until they are nicely browned.

3. Serve with or without powdered sugar. Bon appetit!
