1. Put the sugar in a saucepan over low heat, and stir from time to time until it melts completely and acquires that beautiful caramel color.

2. Add the butter, turn off the heat and mix together until perfectly combined.

..this is how it should look after the butter has melted.

3. Add the cream, turn the heat on low again, just enough to for the caramel “to flicker” and cook for 5-6 minutes.

4. Add the peanuts, combine, and set aside to cool.

the CAKE

5. Preheat the oven to 180°C (360°F).

Line with baking paper the bottom of 3 round 22 cm (9 inch) diameter trays with a removable ring. Or 2 round trays of 30-32 cm (12 inch) and you will assembly your snickers cake with only one layer of filling. Oooor, you can use one large rectangular tray, then cut the cake in 3 equal pieces.

Now add the flour with cocoa, baking powder and bicarbonate into a bowl.

6. Put the eggs together with the milk, sugar, oil, vanilla extract, salt and mix until the sugar melts.

7. Add the mixture of flour and cocoa and mix until well combined.

8. Add the hot coffee, and mix again until well combined.

9. Divide the composition into three equal parts and pour it into the three trays, or into two equal parts and pour it into the two trays, or into one…you’ll decide…how many trays you want to use.

Bake for 18-20 minutes or until a toothpick comes out clean.

I do not recommend pouring the mixture into a tall tray, then cutting it into 3 slices. Honestly, I’ve never done this and I don’t even know how long you should leave it in the oven.

10. Remove from the oven and let them temper for 10 minutes in the trays they were baked in, then remove the baking paper and let them cool completely on a wire rack.

11. Put the cream cheese with the powdered sugar in a bowl and mix until well combined.

12. Add the whipped cream, continue to mix for another 1-2 minutes until it hardens.

13. Save 3 tablespoons of the cream cheese.

Put a cake layer, spread it with a thin layer of cream cheese(so that you have enough for all the layers), make a border with the cream on the edge of the cake like you see in the picture, and put half of the caramel with peanuts. Do the same with the second cake layer, add cream and caramel, then put the third cake layer and with the 3 tbsp of saved cream, cover the cake and put it in the fridge until a bit later.

The chocolate glaze and peanuts

14. Put the milk whipping cream in a bowl and bring it to the boiling point, then turn off the heat and add the chocolate. Leave for 2-3 minutes, then mix until well combined.

15. Let it cool to room temperature and when it has hardened a little, cover the sides of your snickers cake with a third of the total amount of ganache.

16. Add the 50g (2 oz) of chopped peanuts to the chocolate ganache and pour it on top of your snickers cake, then level it. If it is too thick, heat it up slightly, just enough to be manageable.

17. Let it cool for 5-6 hours, then cut and serve.

It is a simple snickers cake perfect for any occasion.

The challenge started after I ate a Snickers bar that had caramel oozing out of it and the peanuts only completed this wonderful picture of my favorite taste. When I got home, I started testing and testing and I didn’t seem to like anything, but in the end, this easy snickers cake recipe came out spectacularly good.
