Nutella cookies easy recipe

These are the best homemade, soft, melt-in-your-mouth Nutella cookies.

Very easy and simple to prepare, compared to the end result. Tasty, crunchy on the outside and with the Nutella filling oozing out of them, especially when warm. These Nutella cookies go great with coffee, dessert or why not wrap them up nicely and take them as a gift to someone you love, they will be grateful to you for sure.

*as you can see, a lot of sugar is used for these Nutella cookies, so I recommend you not to eat too many at once.

1. Add the flour, baking powder and cocoa into a bowl, and mix until well combined.

2. Into another bowl, beat the eggs with the sugar/brown sugar, vanilla extract and salt, and after it has doubled in volume, add the oil and mix a few seconds more.

3. Add the flour mixture to the egg mixture and mix until well combined.

4. Cover the dough and put it in the refrigerator for at least 4 hours. I left it overnight and the Nutella cookies came out perfect.

5. Preheat the oven to 180°C (360°F).

Line 2 baking trays with baking paper.

Using a shapeless piping bag, pour 24 equal hazelnuts. Unfortunately I skipped photographing the hazelnuts, but as an idea these should be about the size of a quail egg. Put them in the freezer for 20 minutes to harden.

6. Remove the dough from the refrigerator and divide it into 24 equal pieces.Roll the balls the size of a walnut and make a hole in the middle like you see in the picture.

Add half of the Nutella hazelnuts.

7. Squeeze the dough slightly so that you’ll cover the Nutella well, give it the shape of the ball again to keep the Nutella inside during baking. After you finish these, do the same with the others. I do it in two rounds so the Nutella hazelnuts stay frozen.

8. Roll well through the powdered sugar.

9. Then put 12 of them on each tray with baking paper at a distance of at least 5 cm (2 inches) from each other. You have to work very quickly so that they don’t soften. If you have neglected this fact put them in the freezer for a few minutes.

10. Bake for 10-12 minutes, after which remove from the oven and let your Nutella cookies to cool in the pan in which were baked.
