I haven’t had a better mediterranean roast turkey in a while.
Although turkey leg is so tasty, it is not so popular due to the fact that it has a structure composed of more muscles and is more difficult to slice, but also because it takes a little longer to cook.

But today I present you a simple juicy garlic herb roast turkey recipe, Mediterranean style, made with lemon, garlic, thyme and rosemary.
This sauce can be used in almost any kind of steak from chicken to pork and even fish, salads to side dishes and more. Since is so versatile, you have to try it and it will definitely be love at first taste.

Mediterranean roast turkey step-by-step directions:

1. Preheat the oven to 360°F (or 180°C).
Clean the garlic and smash it in a garlic press. Grate the lemon peel on a small-mesh grater.
Put all the ingredients in a bowl, except the wine and turkey legs. Mix well with a whisk.

2. Add the turkey legs and coat them well with the sauce. Cover with a foil and leave overnight in the refrigerator or, if you are in a hurry, at least 3 hours at room temperature.

3. If you chose to keep them overnight, take the turkey legs out of the fridge and you can make them as is or rolled and tied as you can see in the photo below.

4. Put the turkey legs in a suitable tray, so that there is not much space left, add the dry white wine (you can also use water, but the wine gives the meat a better flavor), cover with aluminum foil or a lid suitable for the tray. Save the remaining lemon-garlic-herb dressing, you’ll need it later.
5. Put the pan in the oven for 90 minutes and check after an hour if it still has liquid, if not, add a little more wine/water.
6. After 90 minutes, remove the pan from the oven and raise the temperature to 450°F (or 230°C).
When the oven reaches 450°F (or 230°C) degrees, put the tray back in the oven, this time without the lid or foil, and leave it for another 10-15 minutes or until it is nicely browned.
Remove the tray from the oven and pour the remaining sauce over the turkey legs.
If you chose to tie them, remove the string while the turkey legs are still warm and cover again with a lid for 15 minutes.
7. It is ready to serve and can be paired with mashed potatoes, a salad, rice or whatever you like.
