The ingredients below are for one serving of cheese, onion and mushroom quesadilla according to the number of calories you need. For two servings or more, you will multiply the amount.

You can use white button mushroom, shiitakes, crimini, portobello, porcini, or whatever you want.



















  1. Cut onions and mushrooms into thin slices, and cherry tomatoes cut in half; and grate the cheese if you haven’t already.
  2. Put a teaspoon of olive oil in the pan, add half of the sliced onion and cook for 1 minute, then add the mushrooms and a pinch of salt and continue cooking for about 3 minutes.
  3. After 3 minutes, add the cherry tomatoes and continue to cook for about 5 minutes, over high heat, or until the water left by the mushrooms has completely evaporated.
  4. Let it cool a bit and remove the tomato peels, if you don’t like them. They will already be peeled off the tomatoes and will be easy to remove.
  5. Meanwhile, cover half of the tortillas with half of the grated cheese, then add the cooked mushrooms, onion and cherry tomatoes over the cheese.
  6. Now sprinkle the other half of red onion and then the rest of the cheese, and fold over the remaining half of the tortillas, then press it a little so that the ingredients settle well.
  7. Put a non-stick pan on high heat and let it heat up.
  8. Place your onion and mushroom quesadilla in the hot pan for about two minutes and press gently so that the ingredients stick together.
  9. Turn the quesadilla on the other side and leave it for another two minutes, so that both sides get lightly browned and crispy.
  10. Take out the quesadilla on a wood chopping board and cut it into 3 pieces while it is still hot, after which you can serve it.
