In ancient times, asparagus was said to be the food of the gods, being considered an elixir for health, because it contains a multitude of extremely valuable nutrients for the body.

The ingredients below are for one serving of asparagus and peas omelette according to the number of calories you need. For two servings or more, you will multiply the amount.

  1. Remove the fibrous part from the end of the asparagus, then boil the asparagus in boiling water for about 5 minutes.
  2. After the asparagus has boiled, drain it well and cut it into ~1 inch/2-3 cm pieces.
  3. Heat a non-stick pan with a teaspoon of olive oil.
  4. Cook the peas for 2-3 minutes then add the minced garlic and asparagus, and cook them together for another 3 minutes.
  5. Meanwhile, beat the eggs well with salt and pepper to taste.
  6. Pour the beaten eggs over the asparagus and peas and let it simmer, covered with a lid, until it hardens on top enough to turn it over.
  7. When the omelet has hardened, flip it over and let it simmer for another minute.
  8. Put the omelette on a plate and prepare the salad by adding lemon juice and a pinch of salt over the spinach and cherry tomatoes / corn.
